Vanilla Honey: What It Is, What It Tastes Like and How to Use It
Updated: Sep 20
Vanilla honey is one of those combinations that feels immediately familiar, but good vanilla does more than simply make honey taste sweeter. Its warm, rounded aroma softens the floral sweetness of honey and gives it a mellow, almost dessert-like character without turning it into a pudding ingredient only. That makes vanilla infused honey surprisingly versatile, from breakfast and hot drinks to baking, fruit and simple desserts.

What is vanilla honey?
Vanilla honey is honey flavoured with vanilla, although the way that flavour is built can vary from one maker to another. At The Lakes Infusion Co., our version starts with mild acacia honey and combines it with vanilla pods and vanilla extract. The aim is not to cover the honey, but to let the vanilla sit alongside it: warm and aromatic, with the honey still clearly present.
Acacia is particularly useful here because its clean, delicate flavour gives the vanilla room to show. If you are curious about why different honeys behave differently as a base, our guide to the best honey for infusions explains the choice in more detail.
What does vanilla honey taste like?
Expect a soft rather than sharp flavour. Vanilla brings warmth, creaminess and a gentle aromatic sweetness, while the honey contributes its own floral character. The result is richer than plain honey but much less assertive than flavours such as chilli or citrus.
That gentleness is part of the appeal. Vanilla honey can go into foods where a stronger infusion might take over, which makes it a good choice if you are new to flavoured honeys or want a jar that will be used regularly rather than saved for one particular dish. How to use vanilla honey
The easiest way to get to know a new honey is to use it in food you already eat. Start with a teaspoon, taste, and add more only if the dish needs it. Vanilla honey works especially well in the following ways.
Porridge, yoghurt and granola
A teaspoon stirred into porridge or spooned over Greek yoghurt adds sweetness and vanilla at the same time. It is particularly good with banana, berries, apple, toasted nuts or a simple granola. Add it at the end rather than cooking it into porridge for a long time, so the vanilla aroma stays noticeable.
Toast, crumpets and pancakes
Warm bread and butter are perhaps the simplest pairing of all. Vanilla honey also works beautifully over pancakes, waffles, French toast or brioche, where it gives some of the flavour you might otherwise look for from vanilla syrup without needing a separate sauce.
Coffee, hot chocolate and warm milk
Vanilla and coffee are natural partners. Try half to one teaspoon in a mug and adjust from there. It also gives hot chocolate a softer vanilla note, or can turn warm milk into a very simple evening drink. If hot drinks are where you use honey most often, our honey for tea, toast and glazes guide has more pairing ideas.
Fruit and simple desserts
Drizzle vanilla honey over strawberries, peaches, pears or roasted apples. It also suits vanilla ice cream, rice pudding, cheesecake, panna cotta and plain yoghurt-based desserts. Keep the first drizzle light: vanilla honey works best here as a finishing flavour rather than a heavy sauce.
Baking and finishing
For cakes, buns or muffins, vanilla honey is often most noticeable when used after baking. Brush a little over a warm sponge, spoon it over a baked apple or use it to finish a stack of pancakes. You can bake with honey too, but replacing sugar in a recipe changes both liquid balance and browning, so it is better to follow a recipe designed for honey rather than swap it measure for measure.
Is vanilla honey only for sweet food?
Mostly, but not exclusively. Vanilla can work anywhere a gentle sweetness is useful. A very small amount can round out a dressing for a fruit-led salad, glaze roasted carrots or squash, or sit alongside a mild, creamy cheese. These are subtler uses, so start with less than you would for breakfast or dessert.

Our Vanilla Infused Honey
Our Vanilla Infused Honey is one of the newest additions to The Lakes Infusion Co. honey range. We make it in small batches in the Lake District using acacia honey, vanilla pods and vanilla extract. The finished honey is smooth, mellow and warmly aromatic, designed to be useful enough for everyday breakfasts while still feeling special enough for gifting.
Like the rest of our raw honey range, it is never heated above hive temperature and is only gently warmed when needed for bottling. Honey naturally changes in texture over time, so crystallisation is normal and does not mean the honey has spoiled.
