Chilli Honey: What It Is, How It Tastes, and How to Use It

  • 5 min read

Sweet, rich and gently warming, chilli honey brings together the smooth sweetness of honey with the subtle heat of chilli. It is bold enough to transform simple dishes, yet balanced enough to use every day.

At The Lakes Infusion Co., our Chilli Infused Honey is made to be warming rather than overwhelming. The aim is not extreme heat, but balance: sweetness first, followed by a gentle warmth that lingers pleasantly in the background.

It is one of the most versatile infused honeys we make, equally at home on cheeseboards, pizzas, roast vegetables and crispy bacon.

What is chilli honey?

Chilli honey is honey that has been infused or blended with chilli, creating a sweet-and-spicy condiment that works beautifully in both savoury and sweet cooking.

Sometimes referred to as “hot honey”, chilli honey has become increasingly popular in recent years, especially as a finishing drizzle for pizza, fried chicken and roasted vegetables.

A good chilli honey should taste balanced. The chilli should complement the honey rather than overpower it. You should still be able to taste the floral sweetness and depth of the honey itself.

Our Chilli Infused Honey is made to feel warm, rounded and versatile, with a gentle heat that builds gradually rather than aggressively.

Is chilli honey the same as hot honey?

The terms are often used interchangeably, although “hot honey” is usually associated with a stronger American-style chilli heat.

Chilli honey can cover a broader range of styles, from very mild and warming to intensely spicy.

At The Lakes Infusion Co., we prefer a more balanced approach. Our Chilli Infused Honey is designed to enhance food rather than dominate it, making it suitable for everything from cheeseboards to roasted vegetables.

What does chilli honey taste like?

Chilli honey combines two contrasting flavours:

  • smooth sweetness from the honey

  • gentle warmth from the chilli

The result is rich, savoury-friendly and surprisingly versatile.

A good chilli honey should feel layered rather than simply “hot”. The sweetness should arrive first, followed by a subtle warmth that lingers gently afterwards.

Compared with fruit-infused honeys like raspberry honey or blackberry honey, chilli honey feels more savoury and warming. It works especially well with salty foods, roasted flavours and rich cheeses.

How is chilli-infused honey made?

Chilli-infused honey is made by carefully introducing chilli flavour into honey in a way that keeps the final product balanced and smooth.

The goal is not simply to make honey spicy. It is to create something rounded and usable: sweet enough for drizzling, but with enough warmth to elevate savoury dishes.

At The Lakes Infusion Co., we use a light honey base that allows both the sweetness and chilli warmth to come through clearly.

As with many infused honeys, natural variation in texture can occur over time. This is part of the character of real honey.

How to use chilli honey

Chilli honey is one of the easiest infused ingredients to use because it works across so many different dishes.

Like many of our infused honeys, chilli honey works beautifully in both sweet and savoury cooking.

1. Drizzle over pizza

This is perhaps the most famous use for chilli honey, and for good reason.

The sweetness balances salty cheese and rich tomato beautifully, while the chilli adds warmth and depth.

It works especially well with:

  • pepperoni pizza

  • nduja

  • goat’s cheese pizza

  • roasted vegetable pizza

  • flatbreads

A small drizzle just before serving is usually enough.

2. Pair with cheese

Chilli honey is excellent with cheese, especially cheeses that are salty, creamy or rich.

Try it with:

  • whipped feta

  • halloumi

  • goat’s cheese

  • blue cheese

  • mature cheddar

  • baked camembert

It adds warmth and sweetness without needing chutney or jam.

For a simple appetiser, drizzle chilli honey over warm baked feta with thyme and crusty bread.

3. Use with roast vegetables

Chilli honey works beautifully with caramelised vegetables.

Try it with:

  • roasted carrots

  • squash

  • sweet potato

  • cauliflower

  • parsnips

The honey enhances natural sweetness, while the chilli keeps everything balanced.

A drizzle added towards the end of cooking works best.

4. Brush onto meat

Chilli honey makes an excellent glaze for meat thanks to its balance of sweetness and warmth.

It pairs particularly well with:

  • chicken

  • sausages

  • pork

  • bacon

  • chicken wings

Try mixing chilli honey with:

  • mustard

  • soy sauce

  • garlic

  • balsamic vinegar

  • lime juice

for an easy glaze or marinade.

Because honey can catch under very high heat, add it near the end of cooking where possible.

5. Add to breakfast dishes

Chilli honey may sound unusual at breakfast, but it works surprisingly well.

Try a light drizzle over:

  • avocado toast

  • eggs

  • bacon

  • breakfast sandwiches

  • waffles with bacon

The sweet-and-savoury contrast works especially well with salty breakfast foods.

6. Drizzle over fried foods

The gentle heat and sweetness of chilli honey pair beautifully with crispy textures.

Try it with:

  • fried chicken

  • halloumi fries

  • crispy potatoes

  • cauliflower bites

A drizzle just before serving adds warmth and gloss without making dishes heavy.

What does chilli honey pair with?

Chilli honey pairs especially well with ingredients that are salty, creamy, roasted or smoky.

Good pairings include:

  • goat’s cheese

  • whipped feta

  • halloumi

  • pepperoni

  • nduja

  • roast chicken

  • bacon

  • sweet potato

  • squash

  • avocado

  • lime

  • rosemary

It also works beautifully with pizza, flatbreads and cheeseboards where a little sweetness and warmth can lift richer flavours.

Is chilli honey very spicy?

A balanced chilli honey should feel warming rather than painfully hot.

At The Lakes Infusion Co., our Chilli Infused Honey is designed to be approachable and versatile. The warmth builds gently and complements food without overwhelming it.

The exact perception of heat will vary from person to person, but most people find chilli honey milder than a chilli sauce or hot sauce.

Is chilli honey good for you?

Chilli honey is best enjoyed as a flavourful pantry ingredient rather than treated as a health product.

Honey contains natural sugars and should be enjoyed in moderation, while chilli brings warmth and depth that can help elevate simple dishes.

The real appeal of chilli honey is its versatility: the way a small drizzle can transform pizza, vegetables, cheese or roasted meats into something more memorable.

As with all honey, it should not be given to infants under 12 months old.

Does chilli honey crystallise?

Yes, chilli honey may crystallise over time. This is completely natural and does not mean the honey has spoiled.

Some honeys remain runny for longer than others depending on their natural sugar balance and how they are stored.

If crystallisation occurs, the honey can still be enjoyed as normal. Many people actually enjoy crystallised honey spread onto toast or crumpets.

If you prefer a smoother texture, place the closed jar in warm water and allow it to loosen gently. Avoid boiling water or microwaving the honey directly.

Chilli honey vs hot sauce

Although both add heat to food, chilli honey and hot sauce behave very differently.

Hot sauce is usually sharp, acidic and intensely savoury, while chilli honey is sweeter, softer and more rounded.

Chilli honey works especially well where you want:

  • sweetness and heat together

  • a glossy finish

  • gentle warmth rather than sharp spice

  • balance rather than intensity

Many people use chilli honey as a finishing drizzle rather than a cooking sauce.

How to choose a good chilli honey

A good chilli honey should taste balanced and natural.

Look for:

  • a quality honey base

  • warmth rather than harsh heat

  • a smooth texture

  • natural chilli character

  • enough sweetness to remain versatile

The best chilli honeys should feel usable across many different dishes, not just novelty products designed to be extremely spicy.
